FIT FOOD | SWEET POTATO (CINNAMON ROLL) PROTEIN MUFFINS

Hi everyone! Once in awhile I will be posting some of my favorite fit food recipes. These sweet potato protein muffins are one of my FAVORITES (for when I'm in competition prep or just trying to eat clean). So good- they don't taste as healthy as they are!

Ingredients:
10-14 oz sweet potato (I buy the microwave wrapped kind...makes for a super easy prep) *peel the skin off
4 scoops of Ultra Peptide Cinnamon Roll Protein Powder (this is the key to the recipe- worth buying)
4 Egg Whites
3 Tsp Vanilla
1 Splenda (to preference)
Dash of Cinnamon (to preference)

MIX ALL TOGETHER IN A BOWL. THE BATTER SHOULD HAVE SOME LUMPS OF SWEET POTATO. SPOON INTO A MUFFIN PAN (I SPRAY PAM FIRST). MAKES EXACTLY 12.

BAKE AT 350 FOR 18-20 MINUTES. THEY DO NOT RISE LIKE REGULAR MUFFINS DO...THEY WILL BE MORE DENSE. I REHEAT 2 EACH MORNING FOR 20 SECONDS AND ENJOY WITH MY COFFEE. A PERFECT ON-THE-GO HEALTHY SNACK!
