Ingredients:
10-14 oz sweet potato (I buy the microwave wrapped kind...makes for a super easy prep) *peel the skin off
4 scoops of Ultra Peptide Cinnamon Roll Protein Powder (this is the key to the recipe- worth buying)
4 Egg Whites
3 Tsp Vanilla
1 Splenda (to preference)
Dash of Cinnamon (to preference)
MIX ALL TOGETHER IN A BOWL. THE BATTER SHOULD HAVE SOME LUMPS OF SWEET POTATO. SPOON INTO A MUFFIN PAN (I SPRAY PAM FIRST). MAKES EXACTLY 12.
BAKE AT 350 FOR 18-20 MINUTES. THEY DO NOT RISE LIKE REGULAR MUFFINS DO...THEY WILL BE MORE DENSE. I REHEAT 2 EACH MORNING FOR 20 SECONDS AND ENJOY WITH MY COFFEE. A PERFECT ON-THE-GO HEALTHY SNACK!
